Pork Tenderloin with Potatoes and Lemon
Description
Another yummy recipe from Everyday Food – I changed very little.
Ingredients
Pork Tenderloin with Potatoes and Lemon
1 lb. (about 5 medium-sized) red potatoes – wash them, leave the skin on and cut them into 1/2 inch cubes
fresh ground pepper to taste
3 green onions – chopped
1 pork tenderloin, sliced into 12 equal slices, and pressed between your hands to flatten slightly
1 can (10 oz/284 mL) undiluted chicken broth
1 lemon, thinly sliced
1/4 c. fresh cilantro leaves, chopped
Instructions
In a large skillet, heat a bit of oil and add the potatoes. Season with pepper and saute for about 8 to 10 minutes until they start to brown. Add the broth, a half can at a time and cook until each addition has evaporated – this should take another 5 minutes or so.
Add the green onion, cook for another 2 minutes and then remove all to a bowl and keep warm.
To the skillet, add a bit more oil and cook the pork until both sides are browned, 1 or 2 minutes per side. Add the lemon slices and the reserved potatoes and cook for a couple of minutes until all is heated through.
Top with the cilantro and serve.
This really is quick and everyone loved it – a very good weeknight meal.
