Description

Such a fun, fast meal and another of Nigella Lawson’s great ideas…definitely quick enough for a weeknight – enjoy!

1 lb. lean or extra lean ground beef

3 T. EACH grated Parmesan AND oatmeal AND chopped fresh parsley

2 eggs, lightly beaten

1 clove of garlic, minced

1/2 t. EACH salt AND freshly ground pepper

1 can (398 mL/14 oz) diced tomatoes, drained

1 t. dried oregano

4 oz. fresh mozzarella, sliced

fresh basil leaves


Instructions

Preheat the oven to 425 and lightly oil an oven-proof 10 or 11 inch skillet or round pan.  In a large bowl, combine the beef, Parmesan, oatmeal, parsley and eggs and mix well.  Add in the garlic, salt and pepper and mix again – using your hands is probably easiest – don’t overwork it.  Lightly press the meat mix into your prepared pan, and shape it like it’s a pizza crust.

Spread on the drained tomatoes, evenly sprinkle all with the oregano, and then arrange the mozzarella slices evenly on top.  Bake for 20 -25 minutes until the meat is cooked through and then sprinkle with some fresh basil leaves before serving.  We found this perfect with a crusty baguette (dipped in good balsamic and olive oil) and a big salad.
