I had a request…and Smitten Kitchen is generally the first place I check…for everything – shockingly, these were marvelous, I simply doubled the recipe because I’m the proud owner of 12 rocket popsicle molds – enjoy and Happy Valentine’s Day!
Ingredients
Fudge Popsicles – makes 12
4 T. chocolate chips
2/3 c. sugar
2 T. cornstarch
3 T. cocoa
2 1/2 c. whole milk
1/8 t. salt
1 t. vanilla AND 1 T. butter
Instructions
In a medium pot over very low heat, gently and carefully melt the chocolate chips, then whisk in the sugar, cornstarch, cocoa, milk and salt and continue to whisk as you turn the heat up to medium.
Cook and stir until the mixture thickens – this took 10 minutes for me – then remove the pot from the heat and stir in the vanilla and butter. Cool slightly and then pour evenly into all of your molds – allowing them to freeze overnight is always best.
