Meatloaf – Dad’s Favorite

Description

This is the meatloaf that we enjoyed regularly growing up – because it was one of Dad’s favorite meals.  To be honest though, I have a heap of meatloaf recipes that I still want to try – we love Turkey Meatloaf for example, but this handy favorite is my go-to for sandwiches…I make and freeze them as 1-pounders…enjoy!

Meatloaf – Dad’s Favorite 

3 lbs. lean ground beef

1 large onion, finely diced

1 T. salt

1 t. pepper AND garlic powder

1/2 c. chopped fresh parsley (or 1/4 c. dried)

3/4 c. milk AND 2 eggs

3 c. fresh bread crumbs


Instructions

Place all of the ingredients in a large bowl and give it a good mix with a hardy wooden spoon.  You’ll then have to get in there with both hands and work at it until it’s all well combined.  Shape into loaves – either 2 meal-sized or 4 to 5, 1-ish-pounders and either wrap them well and freeze them or get ready to cook.

To cook a 1 pound evenly shaped loaf, bake it at 325 for about 1 hour and 15 minutes or until the internal temperature reads 160+.  If you’re cooking a larger loaf, Mom always set it on thick slices of onion so that the fat would run off and the loaf wouldn’t sit in it.  Again, we prefer this meatloaf sliced and in sandwiches, Mom usually served hers with a baked potato and mushroom sauce.
