Brown Sugar and Mustard Glazed Salmon

Super tasty.  We have a tried and true stand-by for salmon called ‘Rub with Love’ that’s been increasingly difficult to find in even the specialty food stores, so I thought it was a good time to try something new.  This is borrowed from the cookbook, ‘Everyday Food Light’, from the kitchens of Martha Stewart Living, and while I chose to broil it according to the recipe, I’m sure that it would also be dreamy on the barbecue – enjoy!

Brown Sugar and Mustard Glazed Salmon

1 T. olive oil

1/2 of a small red onion, finely minced

1/4 c. red wine vinegar

1/4 c. whole grain mustard

1/4 c. packed dark brown sugar

1 side of salmon (usually 23 lbs.)

salt and freshly ground pepper


Instructions

Line a large baking sheet with foil, give it a light spray, then wash and pat dry the salmon and lay it so that it’s an even thickness throughout (I usually have to tuck ‘the tail’ under).  Sprinkle it all over with salt and freshly ground pepper.  Heat the oil in a small pot and saute the onion for a couple of minutes until it’s softened, then add in the vinegar and cook and stir for a minute or so until it’s almost evaporated.  Stir in the mustard and brown sugar, keep it on the heat briefly to make sure it’s warmed through, then brush at least half of it evenly all over the salmon.

Heat the broiler – I used convection broil, I just find that it cooks more evenly – and broil the salmon until the glaze is bubbling and starting to crisp up, 5 to 10 minutes, depending on the thickness of your salmon.  Ours was done in 10 minutes and then I pour the rest of the ‘sauce’ over the salmon before serving it.  this was terrific with couscous and roasted asparagus!
