I found this recipe in Everyday Food and they’re hearty, heavy, not too sweet, totally different from these and they make a terrific Sunday breakfast. What I have listed is actually the doubled version, it makes a good 4 full (4 x 4) waffles in my waffle maker – just be careful with how much batter you add, these continuing growing as they cook!
Ingredients
Yogurt Waffles
In a large bowl, combine;
1 1/2 c. flour
1 c. whole wheat flour
1 c. large flake oatmeal (not quick cooking)
1 t. salt AND 4 t. baking powder AND 2 t. baking soda
In a second large bowl whisk together;
1/2 c. brown sugar AND 6 eggs AND 6 T. melted butter with;
3 c. plain low-fat yogurt (or sour cream)
Instructions
Add the wet to the dry, mix well to combine, and then allow the batter to sit for a good 15 minutes before you start your waffling.
Cook the waffles according to the instructions of your waffle iron, and maybe use a bit of spray so the waffles release easily. I left each batch for a couple of extra minutes because they’re absolutely thicker than regular waffles – enjoy!
