SunButter Flax Cookies

This recipe came off the back of a milled flaxseed package and these cookies are now also added to my snack-to-go list.  Obviously you can make them with peanut butter or any other nut butter – 2015 – (our new favorite peanut butter substitute is SunButter) – enjoy!


Ingredients

1/2 c. SunButter AND 1/2 c. butter, softened

1 c. sugar

2 eggs, beaten slightly

1 1/4 c. whole wheat flour AND 1/3 c. milled flaxseed

2 t. baking powder


Instructions

Preheat the oven to 350 and line a couple of baking sheets with parchment.  In a large bowl, beat together the peabutter, butter and sugar and then add in the eggs and beat again.  Stir in the flour, flax and baking powder and then roll the dough into tablespoon sized balls before putting onto the baking sheets.

Press each ball with a fork – I found that the first batch didn’t really spread so I flattened all the rest a little more.  Bake for about 12 minutes and allow the cookies to rest on the pan for a bit before transferring them to a rack to cool.
