Creamy Bacon Dip

And here’s the full fat dip – though it should really be named ‘The World’s Greatest Baked Potato Topping’.  We had it on baguette slices, but it was perfect as a vegetable dip too (cucumber slices and celery sticks!), and though I found it in a magazine ad, I believe that the recipe is from here.  There were no leftovers…


Ingredients

Creamy Bacon Dip

1 package (8 oz/250 g) cream cheese, softened

2 c. sour cream

2 c. grated old cheddar

1 c. chopped green onion


Instructions

bacon – as much as you’d like (I used probably half of a regular package, cooked, drained and then I put it through my mini-chopper so that there would be no large pieces for my nephew to have difficulty with)

Preheat the oven to 400 and lightly spray a casserole dish (any size really, shallower is easier for dipping and will heat faster).  In a large bowl, combine all of the ingredients (I used my electric mixer so it took about 10 seconds to beat together), then scrape it all into your prepared dish and heat until bubbling – mine took about 20 minutes.

Serve with bread, crackers, chips or vegetables, and enjoy!
