Apple Pie Burrito

This is the dessert that went with our Mexican brunch on Sunday.  I borrowed the recipe from the Food Network, and we tried it with dulce de leche that you make from boiling a can of condensed milk, but I think that next time I’ll just make some Caramel Sauce or serve the burritos with ice cream.

Apple Pie Burrito

6 apples, cored and cut into chunks (I used Granny Smith and Gala)

2 T. apple juice (x 2)

1 c. brown sugar

1 T. EACH cinnamon AND cornstarch

3/4 c. chopped pecans

6 large flour tortillas


Instructions

Preheat the oven to 375, line a cookie sheet with parchment and put the apples, 2 tablespoons of apple juice, brown sugar and cinnamon into a large non-stick skillet.  Cook it all together for 10 to 15 minutes until the apples start to break down.

In a separate small bowl, whisk together the second 2 tablespoons of apple juice and cornstarch and then stir this into the apple mixture.  Allow it to come to a simmer again and thicken up and then stir in the pecans.

Lay a tortilla on a flat surface and spoon about a half cup of the apple mixture along the edge closest to you, then fold in the sides and roll it up.  Place it on the cookie sheet seam side down and then finish rolling up the rest of the tortillas.  Bake for about 15 minutes until they’ve crisped up and then enjoy with whatever condiment you choose!
