Tequila Shrimp

After Tuesday’s Turkey Chili with Barley we had leftovers on Wednesday, then a quick dinner on swimming lesson night of chicken sausage, yam fries and steamed broccoli.  Friday night was Mediterranean Sole Gratin with couscous and Saturday we were invited out.  Yesterday along with our big Mexican brunch of Black Bean Soft Tacos, we also tried these shrimp from Everyday Food.  Because it was so cold, I just sauteed them, but they would be perfect skewered and barbecued.


Ingredients

Scale

Tequila Shrimp

2 lbs. large shrimp, peeled and deveined

1/2 c. EACH silver or white tequila, fresh lime juice AND fresh orange juice

coarse salt and freshly ground pepper

lime wedges for serving


Instructions

About a half hour before you plan to grill the shrimp,  combine the shrimp with the tequila, lime and orange juice in a large glass bowl.  Mix well, season with salt and pepper and allow it to marinate, covered, in the fridge for the half hour – the citrus will actually cook the shrimp a bit.

When you’re ready to grill, skewer the shrimp (or leave them loose if they’re large enough), and grill for a few minutes until they are opaque throughout – you should need to turn them once.

Serve with lime wedges and more salt and pepper.
