Really Great Waffles

Description

This recipe is borrowed from Orangette via the Food Network.  After some looking around, a lot of sites have a similar one – they’re amazingly light and crispy and perfect!


Ingredients

Really Great Waffles – I usually double this and get 3 (x4) waffles in my waffle maker

3/4 c. flour AND 1/4 c. cornstarch

1 1/2 t. sugar

1/2 t. baking powder

1/4 t. EACH baking soda AND salt

1 c. buttermilk (or half buttermilk and half regular milk)

1/4 c. canola oil AND 1 egg AND 1 t. vanilla


Instructions

Whisk together the flour, cornstarch, sugar, baking powder, baking soda and salt and then add in the rest of the ingredients.  Mix well and then let the batter sit for a half hour or so.

Cook the waffles according to the instructions of your waffle iron, and don’t worry about spraying it – the waffles release easily with no extra assistance.  Enjoy!
