Description
Another addition to our barbecue – borrowed from Smitten Kitchen – I altered it only a tiny bit. Really easy and super delicious – enjoy!
Ingredients
~1 lb. green beans, trimmed and cut in half
~1 lb. cherry tomatoes, cut in half
Dressing
1/4 of a red onion, finely minced, or a medium shallot, cleaned and finely minced
2 T. red wine vinegar AND 1/4 c. olive oil
1/2 t. salt AND 1 t. sugar (or honey)
freshly ground pepper to taste
Instructions
Parboil the beans for about 3 minutes until just tender, pour them into a colander, run cold water over them for a couple of minutes (or dunk quickly in an ice bath) and then drain them well and spread them out on some paper towel or a clean tea towel to dry.
Whisk all of the dressing ingredients together in a medium bowl until well combined, adjust the seasonings as you wish and then gently stir in the tomatoes, leaving them to marinate for a titch. This is a perfect place to stop if prepping ahead.
Right before you serve it, toss the beans in with the tomatoes and dressing and then ladle into a serving bowl or onto a serving platter leaving behind the excess dressing (the beans will discolor if you put the dressing on in advance). This easy salad is a bright addition to any meal!
