Jen’s Kale and Celery Salad (with Everyday Dressing)

Thank you to our fabulous foodie friends who share their recipes!  This is simple, delicious, and perfect with Jen’s go-to ‘Everyday Dressing’.  She loosely borrowed the salad recipe from Ina Garten, and the key is really fresh/green/crunchy celery and massaging the kale.  Roasted nuts and fresh Parmesan are also perfect toppers – I’ve even used smashed spicy dill almonds – enjoy!


Ingredients

Scale

I large bunch curly kale, cleaned, stalks removed and finely chopped

1 T. good olive oil AND 1/4 t. Maldon flaky sea salt – for massaging

1/2 c. chopped parsley (and 1/2 c. chopped fresh dill if you’d like)

~6 bright green celery stalks, sliced on the diagonal (to be fancy) in 1/4-inch pieces

~1 c. sliced or slivered roasted almonds (or walnuts) – or smashed spicy dill almonds

~1/2 c. freshly grated Parmesan (this is optional, use as you see fit)

Jen’s Everyday Dressing

1/4. c. good olive oil AND 2 T. rice wine vinegar

1 t. EACH honey AND Dijon

1/2 t. EACH salt, pepper, garlic powder AND oregano


Instructions

Measure out the dressing ingredients into a container that can be tightly sealed, give it a really good shake and set aside for a bit.  About a half hour ahead of serving, put all of the kale into a large bowl, sprinkle with the olive oil and sea salt and thoroughly massage with your hands until all of the kale is very lightly coated.

Right before serving, add in the celery and herbs that you’re using, give the dressing another shake and pour on about about half, then toss well.  Sprinkle in about half the almonds and half the Parmesan, toss again and decide if it needs more dressing.  Add more dressing if you wish, toss one last time, transfer to your ‘serving salad bowl’ if it’s not already there, and then sprinkle on the remaining nuts and cheese.  This is a really perfect salad and it goes with anything!
