Description

A wonderful topping for so many things!  Found at the Kitchn, it can be sprinkled on hummus, roasted vegetables, avocado toast or eggs or even used as a coating for chicken or fish – enjoy!


Ingredients

1/2 c. raw nuts – I used sliced almonds but hazelnuts are also recommended in many recipes

1 t. fennel seeds

4 t. white or black sesame seeds, or a combination (I used white)

1 t. EACH coriander AND cumin

1/2 t. EACH smoked paprika AND kosher salt

1/2 t. freshly ground black pepper (or white pepper) – I used white pepper


Instructions

Use a mini chopper or food processor to pulse the nuts and fennel seeds until all are coarsely ground.  Scrape into a small skillet and toast on medium-low heat for a few minutes until you can smell the fennel, then add in the sesame seeds and continue to toast and stir for another couple of minutes until the nuts and seeds are beginning to brown.

Remove the pan from the heat, stir in all of the spices and then leave the mix to cool completely before using, or storing in an airtight container in the fridge (or freezer).
