Spaghetti Squash Dinner Boats (so many options!)

Description

Somewhat similar to stuffed zucchini, you can do just about anything with squash and my ideas were borrowed from Delish and Half Baked Harvest.  This is another one of those ‘dinner outlines’ – use what you have, but either lasagna/Italian or burrito/Mexican are my/our current go-tos – enjoy!


Ingredients

Scale

2 similar-sized spaghetti squash, cut in half length-wise and seeded

salt, pepper and olive oil for roasting

Lasagna Filling Outline

-ground beef or turkey cooked and broken up with some chopped garlic and onion – or – just use garlic/onion powder/salt and consider throwing in some oregano or basil or chili flakes – I’ve also used black beans or cannellini beans or white kidney beans – add some diced or crushed tomatoes to make it saucy

-ricotta or cottage cheese mixed with some Parmesan and herbs – maybe a titch of cream if it’s too thick

-extra cheese for topping and baking

Burrito Filling Outline – sprinkle some cumin on the squash while it’s roasting!

-ground beef or turkey cooked and broken up with some chopped garlic and onion – or – just use garlic/onion powder/salt with some cumin or taco seasoning if you have it and hot sauce or chili flakes – I’ve also used black beans or cannellini beans or white kidney beans (corn is also really tasty) – add some of your favorite salsa, enchilada sauce or salsa verde to make it saucy

-ricotta or cottage cheese mixed with some feta and maybe cilantro – maybe a titch of cream if it’s too thick

-extra cheese for topping and baking


Instructions

Preheat the oven to 400 and line a large baking sheet with parchment.  Spray or rub each half of the cleaned squash with olive oil and then generously sprinkle with salt and pepper.  Roast for about 30 minutes until tender and then use a fork to loosen the strands of squash up a bit – give each half a bit of scraping, this makes the ‘dinner boat’ easier to eat and clean out later on.

Layer on your fillings – I like to sprinkle a bit of cheese, then the meat/bean sauce, ricotta cheese layer, a bit more meat/bean sauce and then a generous helping of cheese to top before baking.

Bake your dinner boats again for about 20 more minutes until the whole package is heated through and the cheese topping is browned and bubbling.  Serve individually and be careful when you dive in – everything is hot and trying to scrape out the squash with everything loaded on top can get a little messy.
