Newfoundland Five Star Cookie Bars

Oh my goodness, these are a thing!  Who knew??  I chose to try the recipe from Lord Byron’s Kitchen and considering how easy these goodies are to make, they really do deserve 5 stars – enjoy!


Ingredients

Scale

1/4 c. butter, melted, but not hot

1 can (300 mL) condensed milk AND 1 t. vanilla

2 c. graham cracker crumbs (though in some versions they use 1 1/2 c. graham crumbs and 1/2 c. large flake oats)

2 c. unsweetened coconut

5 Aero bars (42 g each), broken up


Instructions

Preheat the oven to 350, butter an 8 x 8 baking pan, line it with parchment so that it has 2 overhanging ‘handles’ and butter the parchment.

Add the melted butter, condensed milk and vanilla to a bowl and stir well to combine with a sturdy spatula – you could also use a hand mixer, but it’s truly not necessary.  Add in the graham cracker crumbs (the oatmeal, if using) and the coconut, stir well and then press evenly into your prepared pan.  Bake for 20 minutes until the edges are lightly browned.

As soon as the base comes out of the oven, scatter the broken Aero bars evenly over the top and then walk away for 10 minutes.  When you return, use the back of a spoon to even spread the now melted milk chocolate.

Allow the cookie bars to completely cool to room temperature before attempting to cut into squares – these are as rich as you can imagine but it will still be difficult to stop at just one!
