Melting Sweet Potatoes (with Maple Butter)

Not to be confused with Melting Potatoes (but pretty darn close), this is a terrific idea that I found on Eating Well.  I amped up the amounts a bit but left the sweetness the same…truly melt-in-your-mouth awesomeness – enjoy!


Ingredients

3 lbs. sweet potatoes, peeled and cut into even 1-inch slices

4 T. butter, melted AND 2 T. olive oil

1 1/2 t. salt AND 1 t. freshly ground pepper

3/4 c. vegetable (or chicken) broth AND 1/4 c. maple syrup AND 1 T. lemon juice


Instructions

Preheat the oven to 450 and get out a large baking sheet.  Toss together the potato slices with the butter, oil, salt and pepper in a large bowl and then arrange them in a single layer on your baking sheet.  Roast, flipping each slice once, for 30 minutes.

As the potatoes are roasting, whisk together the broth, maple syrup and lemon juice in a 2-cup glass measuring cup and microwave for 1 minute.  Whisk again and then when the potatoes have finished their half hour of roasting. carefully take out the pan and evenly pour the broth mix over all.  Bake for another 10 minutes until the liquid has all been absorbed and the potatoes are tender (melting!).  Serve straight away!
