Gingerbread Waffles

Such a fabulous find!  You know a cookbook is a great one when after all of my thousands of hours of recipe perusing, I can find an original waffle recipe, that’s eye-rolling good!  Borrowed from, ‘The Bite Me Balance Cookbook’, by Julie Albert and Lisa Gnat, the recipe below makes a perfect 3 sets of 4 waffles in my maker.  The authors served theirs with a lovely apple cinnamon concoction but personally, all I need is a lotta butta and the rest of the family loves their maple syrup – enjoy!


Ingredients

Scale

2 c. flour AND 1/4 c. brown sugar

1 T. baking powder AND 2 t. ground ginger

1 1/2 t. cinnamon AND 1/2 t. kosher salt AND 1/4 t. nutmeg

2 egg yolks AND 1 1/2 c. buttermilk – room temperature

1/3 c. EACH melted butter AND molasses

1 t. vanilla

4 egg whites AND 2 T. sugar


Instructions

Preheat your waffle iron and in a large bowl, whisk togehter the 7 dry ingredients.  In a separate smaller bowl, whisk together the egg yolks, buttermilk, melted butter, molasses and vanilla and then start whipping the egg whites in your electric mixer on high speed.

When the egg whites are foamy, stop the mixer and add in the sugar and then continue to beat until stiff peaks form.

As the whites are happening, mix the bowl of wet ingredients into the dry and combine until there’s no trace of flour.  When the whites are stiff, carefully scrape them into the waffle mix and fold until just incorporated.

When the batter is ready and the waffle iron is hot, add a bit of spray to the hot iron and cook as instructed – I left mine for a couple of minutes longer than usual just to get them a titch crispy.  Garnish as you would and make a note that next time you’ll make a double batch!
