Honey Marinade (for Chops or Chicken)

I know I’ve said this before, but the best treat you could ever give yourself in the meal prep category would be to have some marinated protein waiting for you in your freezer.  Five minutes to a couple of bonus meals that work with just about anything on the side.  This little idea was originally from Everyday Food, I used it on pork chops, but it could also be used for a salad or even as a dressing for some roasted or grilled vegetables – enjoy!


Ingredients

Scale

1/4 c. EACH honey, red wine vinegar AND olive oil

2 T. Dijon

1/2 t. EACH kosher salt AND freshly ground pepper


Instructions

That’s it!  Whisk everything together and add with ~6 pork chops or ~4 chicken breasts to a shallow dish (to cover and refrigerate until grilling), or to a freezer Ziploc (to store away for a later date).  Super simple, super tasty, you can even consider swapping out the acid, the sweet or the oil.  Also think about extra-firm tofu slices or using it as a dressing for cabbage slaw.
