Beef and Broccoli Stir Fry

Description

A tasty stir fry originally from Everyday Food, updated and simplified even further in April 2023.  Please use this as an outline – I do!  I’m really just making it a post to make sure I remember how quick and easy stir frys can be – enjoy!


Ingredients

Scale

Marinade

3 T. EACH soy sauce AND roasted sesame oil

2 T. brown sugar (I’ve also used a bit of oyster sauce or mirin or white wine or apple juice for sweetness)

1 T. cornstarch

about 1 lb. flank or other cheaper cut of steak, cut into thin strips across the grain

Other

sesame oil for cooking

1 small onion, thinly sliced into half or quarter moons

1 T. EACH finely minced ginger AND garlic

1 good-sized head of broccoli, trimmed and cut into bit-sized pieces (I also usually add any other odd vegetable bits from my fridge)

1 c. strong broth (chicken and beef are both tasty)

sesame seeds and sriracha for garnish


Instructions

Placed the sliced beef in a medium glass bowl, sprinkle the marinade ingredients over all, stir well (I find using a fork is easiest) and then leave the beef to marinate for at least 15 minutes or refrigerate if prepping ahead.

Heat a bit of oil in a large, non-stick skillet and cook the meat over medium-high heat until slightly browned all over – about 2 minutes.  Transfer the meat to a plate.

Splash in a titch more sesame oil if the pan is dry, then add in the onion, ginger and garlic and cook for a couple of minutes before stirring in all of the vegetables that you’re using.  You want the vegetables (especially broccoli) to still have their crunch.  Stir in all of the broth and bring the mix to a boil – this should thicken things up slightly.  Stir in all of the beef and stir and boil the mix for a quick minute before serving hot over rice.  Garnish as you wish!
