Alton’s Cocoa Brownies

The Kitchen often does ‘recipe testing’ and in the case of brownies, Alton Brown won. There’s a lot of mixing, but this is still a quick and simple recipe…yet another brownie wonder to add to my collection – enjoy!

Alton’s Cocoa Brownies

4 eggs

1 c. EACH sugar AND brown sugar

1 c. butter, melted

1 1/4 c. cocoa

2 t. vanilla

1/2 c. flour AND 1/2 t. kosher salt


Instructions

Preheat the oven to 300 and generously butter an 8 x 8 cake pan. User your electric mixer with the whisk attachment, beat the eggs at medium speed for a few minutes until light and fluffy. Add in both sugars, mix well, then add in the remaining ingredients and mix until well combined and there is no trace of flour.

Scrape the batter into your prepared pan and bake for about 45 minutes (50 minutes was perfect for me) – use a toothpick and check that it comes out clean from the center. Allow the brownies to cool in the pan and if you want a proper square, allow them to cool completely before cutting.
