Key Lime Pie (Quick!)

Ma made this as a dessert option for Thanksgiving and I’ve made it a couple of times already because it’s so quick and so very tasty! (and maybe limes were on sale and I bought a couple of bags). Borrowed from Ricardo’s site, this is easily a weeknight or anytime pie, just remember to zest your limes before juicing them – enjoy!

Key Lime Pie (Quick!)

Crust

1 1/4 c. graham cracker crumbs AND 2 T. sugar

1/4 c. butter, melted

Preheat the oven to 350, mix the 3 crust ingredients together until well combined and then press evenly into your favorite pie plate. Bake for 10 minutes and then allow to cool completely.

Filling

1 c. freshly squeezed key lime (or regular lime) juice

2 T. cornstarch

1 can (300 mL) sweetened condensed milk

zest of 6 key limes (or 1 regular lime)

2 T. cream AND 2 eggs


Instructions

In a medium pot, off the heat, whisk together the lime juice and cornstarch, then add in the remaining ingredients and mix well. Now bring the mix to a boil over medium heat, stirring and taking care of the bottom of the pot the entire time, until it thickens. This will take a few minutes, be patient, it’s worth it!

Once the filling has thickened, pour it into your prepared and cooled crust and carefully smooth the top. I left mine to cool on the counter for about a half hour and then you need to refrigerate your pie for about 3 hours so that it can completely cool down and set.

When you’re getting ready to serve, whip the cream.

1 3/4 c. heavy cream AND 1 T. icing sugar AND 1 t. + key lime or lime zest

Beat all ingredients until stiff peaks form and then garnish the pie as you wish!
