Kale and Sausage Fried ‘Rice’

Description

I used farro…which, along with freekeh is a recommended grain to use from Candice Kumai’s recipe in her book, ‘Clean Green Eats’, (though of course, rice would work).  This has a lot of components to prep, but all can be done ahead of time or even a day or 2 before – I even squeezed small sausage ‘meatballs’ from their casings and baked them so they were cooked and ready to go.  A lot of different ingredients could be used, but below is what I did, and we loved it (and we also loved our leftovers) – enjoy!

Ingredients

Kale and Sausage Fried ‘Rice’

2 c. farro (or freekeh), cooked in broth and drained

2 T. toasted sesame oil (untoasted also works) AND 1/4 c. soy sauce

1 large onion, finely diced AND 2 cloves of garlic, finely minced

3 large carrots, peeled and cut into rounds or sliced on the diagonal

1 bunch green onions (or scallions) diced or thinly sliced on the diagonal

5 eggs – beaten in a small bowl

4 good-sized sausages, either removed from their casing and baked in ‘meatballs’, or precooked and sliced into rounds

3 to 4 c. finely chopped kale

toppings – toasted sesame seeds, chopped green onion and hot sauce


Instructions

When you have your ingredients all prepped and you’re ready to begin cooking, heat up a large non-stick skillet over medium-high heat.  Add in the sesame oil, soy sauce, onion and garlic and saute for a couple of minutes, then add in the carrots and green onion and cook for another few minutes until all is heated through.

I changed up the order of the original recipe and added in the kale next (mostly because I added so much).  Cook and stir and allow the kale to wilt down a bit, then add in the grain and stir until it’s heated through, then make a well in the middle of all of it and add in the eggs.  I used a spatula and worked at scrambling the eggs by stirring gently, and once they were soft scrambled I added in the sausage.  Cook for as long as you need to make sure the eggs are cooked and everything is once again heated through, then serve it up in big bowls and sprinkle on your toppings as you wish.

    This is not a comment on a specific recipe. I am unsuccessful at using your search. I do not seem to know how to say “search” one I enter my request. i.e. I go to your “search” enter “Mexican” and then do not know how to press some search mechanism.

    I was looking for a ceviche (mexican) (spelling not sure of). There are lots of recipes on “all recipes”, etc. but i was going to look at your site first.

    I love your Deanna’s daughter site. i feel i am safe on it. I love any recipe i have tried i.e. bacon tart, etcl Rather than search the web I go to your site feeling that if Meagan does not make this item then I do not need to make it. Please say hello to your mother.
