Ham and Gruyère Hash Brown Waffles

This…was the end of my waffle maker, or I may have gotten a better photo.  It didn’t have much time left to be fair, but these waffles are so tasty, they are a reason to get a new one!  Straight away!  I found this in Eating Well and they were a delightful weeknight dinner – enjoy!


Ingredients

Ham and Gruyère Hash Brown Waffles

1 kg bag of frozen shredded hash browns, thawed in the fridge overnight and squeezed dry (clean kitchen towels work great!)

2 c. finely diced ham OR 300 g minced, shaved deli ham

2 cups grated Gruyère

6 eggs AND 4 T. olive oil

1/4 c. finely minced green onion OR minced fresh chives

3 or 4 cloves of garlic, minced AND 1/2 t. freshly ground pepper


Instructions

Prep all of your ingredients and preheat your waffle iron.  In a large bowl whisk together the eggs, oil, green onion, garlic and pepper, then stir in the ‘dry as possible’ hash browns, ham and Gruyère.

Spray or lightly oil your waffle iron and scoop in a generous 2 to 3 cups of batter, quickly evening it out over the whole hot surface.  Slowly press the lid to close and cook until the waffle is wonderfully browned and crisp – this should take about 5 minutes per waffle.  Remove the waffle to a baking sheet in a warm oven until the rest are cooked, giving your waffle maker time to fully reheat between batches.  The kitchen smelled like a creperie (to everyone’s joy), and we enjoyed these with a big green salad.
