Description
Coleslaw to me is like any other salad recipe…there are reams to chose from, and my mood generally dictates what to make – I’m listing below a recipe that works for a crowd. Borrowed from Ron Shewchuk’s book, ‘Barbecue Secrets’, this is one of many recipes that I’ve made many times, that I just haven’t gotten around to posting yet – enjoy!
Ingredients
Coleslaw (Tidewater)
1 bag (3 lbs/48 oz/1.36 kg) coleslaw mix OR 1 small head of cabbage (or 1/2 a green and 1/2 a purple) finely shredded and 2 carrots, grated
Dressing
1 1/2 c. mayonnaise
1/2 c. white vinegar AND 1/3 c. sugar
1 T. toasted cumin seeds
Instructions
Whisk together the dressing ingredients in a large bowl, add all of the slaw mix and toss well to combine. I usually mix this up before the crowd arrives, then cover it and put it in the fridge – just make sure to toss it again right before serving!
