Ma found this in a Co-op flyer! – Yet another tasty version to add to the rotation, below is the doubled recipe.
Ingredients
Granola (Cashew)
4 c. large flake oats
1/2 c. EACH raw whole almonds AND raw whole cashews AND pepitas (raw pumpkin seeds)
1 c. unsweetened coconut AND 1/3 c. packed brown sugar
1/3 c. EACH honey (or maple syrup) AND canola oil
1/2 t. salt
1 c. EACH craisins AND raisins (or the equivalent in your favorite dried fruit)
Instructions
Preheat the oven to 250. In a large bowl, whisk together the oats, almonds, cashews, pepitas, coconut and brown sugar, and in a smaller bowl, whisk together the honey (or maple syrup), oil and salt. Add the wet to the dry and stir well to combine, then spread the whole mix out in a single onto a large baking sheet – depending on the size of your baking sheets, you may wish to use 2.
Bake for about an hour and 15 minutes, removing the sheets from the oven every 15 minutes to give the granola a stir. When the granola is nicely toasted, stir in the craisins and raisins and allow it all to cool completely before eating or storing – enjoy!
