Garlic Kale

Description

A really wonderful side to any meal…think warm salad…and it takes only minutes to throw together.  I found this in Ree Drummond’s book, ‘The Pioneer Woman Cooks, Food from my Frontier’, but I’m sure she also has it posted.


Ingredients

Scale

Garlic Kale

1 large bunch of kale, any variety, washed, thick stems removed and torn into chunks

2 T. olive oil

5 or 6 cloves of garlic, minced

salt and freshly ground pepper to taste


Instructions

Heat up the olive oil in a large skillet and add the garlic, stirring it around quickly so that it doesn’t burn.  Add in all of the kale and use tongs to toss it gently and move it around.  Sprinkle on some salt and pepper and continue to cook it for a couple of minutes until it just starts to wilt.  Remove the kale to a plate and serve it up – enjoy!
