Cheese Drop Biscuits

Description

This is an old, old recipe from my Mom – and they are equally good with almost any other type of cheese other than cheddar.  Five minutes to the greatest warm and cozy side of all time and strawberry jam or honey is a must!


Ingredients

Scale

1 c. flour AND 2 t. baking powder

4 T. butter

1 c. grated sharp cheddar

1/2 c. cold water


Instructions

Combine the flour and baking powder and cut in the butter as you would for pastry – I use a pastry cutter, but a fork could work.  Add the cheese, tossing to coat and then the water.  Mix well, adding a bit more water if needed.

Drop by large spoonfuls onto a cookie sheet covered with parchment paper and bake for 8 – 10 minutes at 400.

These are perfect with chili or soup but we also regularly have them for breakfast or as a snack when the girls have a friend over – enjoy!
