This is an old recipe from my Mom – and they are equally good without cheese, or with almost any other type of cheese other than cheddar.

Cheese Drop Biscuits

1 c. flour

2 t. baking powder

4 T. butter

1 c. grated sharp cheddar

1/2 c. cold water

Combine the flour and baking powder and cut in the butter as you would for pastry – I use a pastry cutter, but a fork could work.  Add the cheese, tossing to coat and then the water.  Mix well and add a bit more water if needed.

Drop by spoonfuls onto a cookie sheet covered with parchment paper and bake for 8 – 10 minutes at 400.

These are perfect with chili or soup but we also regularly have them for breakfast or as a snack when the girls have a friend over – they are tastiest with jam.
