Jalapeño Tequila Gimlet

Description

Brock cocktail!  And for those who know him…picture him with a pair of fondue forks, blackening jalapenos over the gas stove.  He found this on Bon Appetit, and we enjoy them regularly, hence the need to post.  Keep in mind that there’s a bit of planning involved, you need it to steep for an hour! – enjoy!


Ingredients

Jalapeño Tequila Gimlet

2 jalapeños, stemmed

2 c. tequila blanco

1 c. fresh lime juice

1/2 c. agave syrup (nectar)


Instructions

Grill, broil or roast jalapeños over a gas flame, turning frequently, until soft and charred, then when they’re cool enough to handle – stem and chop them.

Transfer chiles (and seeds if using), to a large jar, add the tequila and let the mix sit and steep for an hour. Strain the mixture through a fine-mesh sieve into a medium pitcher and discard the solids in the sieve. Stir in the lime juice, agave syrup, and 2 cups ice (to chill and dilute). Let stand, stirring occasionally, until ice is melted. Divide the gimlet among chilled glasses…and relax.
