Pulled Pork Tacos (Slow Cooker)

Description

I’ve been making a huge effort to use my slow cooker more – it’s ridiculously handy…if you’re organized.  Fortunately for me (and Brock and the girls), I tried this one a week after I actually threw away the entire contents of my slow cooker due to a particularly disastrous recipe.  Needless to say, pulled pork this good is enough to restore anyone’s faith…especially when it’s this easy – this is borrowed from ‘Savory Sweet Life’, by Alice Currah – enjoy!

Pulled Pork Tacos (Slow Cooker)

3 lbs. boneless pork shoulder, trimmed and cut into 3-inch chunks

3 T. dark brown sugar

1 T. EACH ground cumin AND coriander

2 t. EACH garlic salt AND smoked paprika

1 t. dried oregano

1/2 c. soy sauce

1/4 c. vinegar

1 medium onion, chopped

***corn tortillas, avocado slices, salsa verde, cilantro, sour cream hot sauce and anything else you’d like for serving


Instructions

Place the pork chunks into a large bowl (or a large Ziploc bag) and in a small bowl, whisk together the sugar and 5 spices.  Add the mixture to the pork and massage it in with your hands, then add in the soy sauce and vinegar, mix well and either cover and refrigerate overnight, or leave everything in the large Ziploc and freeze until you want to make this.

When you’re ready to cook, scatter the onions on the bottom of your slow cooker, add all of the pork and marinade and cook on LOW for 8 to 10 hours until the pork comes apart easily.  Use 2 forks to carefully shred the meat and give it a good mix before you start making your tacos.
