Michelle’s Baked Oatmeal

Description

One of our music lesson Mom’s was kind enough to pass this along and we all loved it!  I’m sure it would also be great made ahead and reheated, but all 4 of us were home for breakfast the morning I tried it and there were no leftovers…thanks again Michelle!


Ingredients

Michelle’s Baked Oatmeal

1 good-sized apple, unpeeled and grated (about 1 c.)

2 c. oatmeal

1/4 c. packed brown sugar

1 1/2 t. baking powder

1/2 t. cinnamon

1/2 t. salt

1 c. milk

2 eggs

1/4 c. canola oil


Instructions

Preheat the oven to 350 and spray your favorite 8 x 8 cake pan.  Whisk together the first 6 ingredients in a large bowl and then add in the milk, eggs and oil and mix thoroughly to combine – I found that a sturdy spatula was all that was needed.  Scrape it all into your prepared pan and bake for about 35 minutes.  Michelle recommended leaving it to bake until the edges are crisp – and I totally agree.  This is especially tasty with some yogurt and fruit – enjoy!
