Pineapple Marinade

I can’t remember what I was searching for, but I came across this tasty marinade on About.com.  They suggest pork or chicken…I had chicken breasts, and it was a perfect day to barbecue – though next time, I think I need to plan ahead and have some fresh pineapple on hand to throw on the grill as well – enjoy!


Ingredients

Scale

Pineapple Marinade

1 can (389 mL/14 oz) crushed pineapple

1/2 c. soy sauce

1/3 c. honey

1/4 c. apple cinder vinegar

4 + cloves of garlic, minced

1 T. grated fresh ginger

1/4 t. ground cloves

1/4 t. cayenne (optional)


Instructions

Whisk all together in a medium bowl and marinate your meat (in this case, 6 smallish chicken breasts), for a few hours or overnight and then barbecue as you would.  These went brilliantly with Potato Salad and fresh tomatoes drizzled with Blaze.
