Zucchini-Bacon-Macaroni Pie

Description

As I’ve mentioned, we started our first vegetable garden this year and zucchini and yellow squash are in abundance.  I regularly give it away, but I also checked out all of the zucchini cookbooks I could find at the library.  Tonight’s dinner was adapted from John Butler’s, “Zucchini, You Can Never Have Enough”, and I have to admit, it was the bacon that made me try it.

Zucchini-Bacon-Macaroni Pie

2 medium-sized zucchini or yellow squash

2 beaten eggs

2 c. cooked elbow macaroni (this is about 100 g uncooked)

1/4 c. chopped fresh parsley AND 2 c. ricotta cheese

6 finely chopped green onions (around one cup)

salt and freshly ground pepper to taste

12 slices cooked, chopped bacon

3/4 c. grated mozzarella AND 1/4 c. grated Parmesan


Instructions

Slice the zucchini into 1/4 inch pieces, cook in boiling, salted water for 3 minutes, drain, rinse with cold water, drain again and set aside.  Alternatively (but actually what I most often do now since I’m turning the oven on), roast the zucchini slices for about 10 minutes…and feel free to throw on any leftover vegetables! Like onions and peppers!

In a large bowl, mix together the eggs, cooked macaroni, parsley, ricotta and green onion and give it all a good sprinkling of salt and freshly ground pepper. Line a greased, 9 1/2-inch Pyrex pie plate with 1/2 of the zucchini and spread with half of the macaroni mixture.  Layer on the rest of the zucchini, top with the rest of the macaroni mixture and then in the following order layer with chopped bacon, mozzarella and then the Parmesan.

Bake for about 45 minutes at 350, and let it rest for about 10 minutes before you cut it.  Very tasty with fresh garden carrots.

    This is a fine looking recipe. I planted 2 yellow squash in my perrenial garden and now one is working its way up one side of my 12 foot tall mock orange bush. So either I will have lots of produce to try out your recipe or I’ll just have a weird and interesting garden. Hope to try your recipe soon!
