Apple Cheddar Loaf

Directly from Everybody Likes Sandwiches, this is really lovely, especially with something like Kyla’s Chili (and strawberry jam!).  It’s very dense so use an instant thermometer to check the center is baked to 200 degrees…another option would be to try this in a 9x 5 loaf pan so it’s thinner – enjoy!


Ingredients

Scale

1 3/4 c. flour AND 2 1/2 t. baking powder AND 1/2 t. salt

3/4 c. + 2 T. milk

1/3 c. canola oil

1 egg AND 2 T. brown sugar

1 c. peeled and finely diced apple – usually just 1 medium apple

1 c. grated old cheddar + more for the top if you’d like


Instructions

Preheat the oven to 400 and grease an 8 x 4 loaf pan – line it with parchment as well if you’d like.  In a small bowl, whisk together the flour, baking powder and salt, and in a large bowl, whisk together the milk, oil, egg, and brown sugar.

Add the apple to the ‘wet’ bowl and give it a good stir, then add in the flour mixture and stir, and then finally add in the cheese – breaking it up as it’s added so it mixes well.  Scrape the batter into your prepared loaf pan and bake for a total of 45 to 50 minutes until it’s a lovely golden brown, and an instant thermometer reaches 200 in the center – if you’d like extra cheese on top, add it for the last 10 minutes or so of the total baking time, or sprinkle some on as it comes out of the oven.  Allow the loaf to cool in the pan for about 10 minutes before turning it out onto a rack to cool completely – though we didn’t wait for this, we enjoyed it warm.
