I made this to take to a function a while back and almost didn’t bring it out because I thought it was just a big, gooey fail…but turns out it was actually really good and both kids and adults alike just about wiped it out!  I found the recipe here, and changed it only a wee bit – my advice is to make sure the condensed milk is warm.  If it’s truly warm (immersed in a bowl of hot water for several minutes before opening), then you really can drizzle it evenly, where it needs to go, and all of your squares should come out of the pan, in squares.  And this is a ‘make ahead‘ item – make it the day before to ensure that it’s set.  Enjoy!

Rocky Road Squares

2 c. graham cracker crumbs

1/2 c. butter, melted

1 1/2 c. unsweetened coconut

1 1/2 c. chopped pecans

1 1/2 c. chocolate chips

1 1/2 c. miniature marshmallows

1 can (300 mL) sweetened condensed milk, warm

melted unsweetened chocolate for drizzling/decorating (optional)


Instructions

Preheat oven to 350, and spray a 9 x 13 pan.  In a medium bowl, combine the graham crumbs and melted butter and then press the mixture evenly into your prepared pan.  Sprinkle the coconut evenly over the bottom, then the pecans, the chocolate chips and finally the marshmallows, then drizzle the condensed milk as evenly as possible over all.

Cover loosely with foil and bake for 15 minutes, then remove the foil and bake for 10 to 15 minutes more until the marshmallows are nicely browned and the edges are bubbling.  Allow to cool completely, drizzle with the extra chocolate if you wish, and then (preferably) allow it to sit for a day (covered after it’s cooled) before you cut it into squares.
