Oatmeal (Pumpkin Pie and Apple Pie)

We eat a lot of oatmeal, and after being reminded of the pumpkin pie oatmeal (Rebecca!), I searched for it and already had a copy printed off from here.  I also sometimes do an apple pie version that I saw on a food show at some point, so I’m listing them both – oatmeal can be something you eat because you crave it!  All ingredients are totally interchangeable.


Ingredients

Pumpkin Pie Oatmeal

3 c. water AND a pinch of salt

1 c. steel cut oats

1/2 c. pumpkin puree

2 t. cinnamon

1/4 t. cardamon

1/8 t. EACH ground cloves AND nutmeg

2 T. maple syrup

plain or vanilla yogurt and toasted pecans for topping

Bring the water and salt to a boil then add in the oats and reduce to a simmer, cooking and stirring occasionally until the water is soaked up and the oats are tender, 15 to 20 minutes.  Add in the pumpkin, spices and maple syrup and give it s stir.  This is 4 servings for us and we love our yogurt and nut topping.

Apple Pie Oatmeal

3 c. water AND a pinch of salt

1 1/2 c. regular quick-cooking oatmeal

1 apple, cored and diced – leave the skin on

1 t. cinnamon

1/4 t. nutmeg

2 T. brown sugar

plain or vanilla yogurt and toasted pecans for topping


Instructions

Bring the water and salt to a boil and then add in everything else.  Reduce the heat to a simmer and cook and stir until it’s the consistency that you want.  This is 4 servings for us as well – top as you’d like.
