Brunch Squares

Description

This was Sunday’s brunch, a recipe from my sister-in-law which she got from a Pampered Chef friend.  I altered it a bit because I decided to serve barbecued sausage and hot cross buns, so I left out the original ham and then just put it together in a way that I thought made sense.  It’s very hearty, and very quick – great for a crowd!


Ingredients

1 kg bag of frozen hash browns, thawed (leftover potatoes would also work)

1 c. chopped green onion (or any other kind of onion)

salt and freshly ground pepper

1 c. chopped cooked ham or sausage (optional)

1 c. grated old cheddar, divided

12 eggs

1 c./250 g cream cheese, softened (a flavored kind would also be tasty)

3 to 4 plum tomatoes, diced

salsa and/or hot sauce for serving


Instructions

Preheat the oven to 400 and lightly spray a 9 x 13 baking dish.  Leave the hash browns in the fridge overnight to thaw and then put them all into a large skillet with the onions and saute them together until they were nicely browned and hot all the way through – sprinkle with salt and pepper as you like.  Layer them at the bottom of the prepared dish and press them in a bit so it’s a nice, even layer of potatoes.

If you’re using ham or sausage, sprinkle it on next along with half of the cheddar, then whisk together the eggs and cream cheese and pour the mixture over top.  Bake for about 5 minutes, then remove the pan, sprinkle on the rest of the cheddar (or even more, if you’d like), and then bake for another 5 to 10 minutes until the eggs have set.  If everything was warm to start this won’t take long.

Sprinkle the diced tomatoes over the top and serve – if it’s set, it should easily cut into perfect squares.  Enjoy!
