These made up dinner along with some scrambled eggs on Wednesday, Thursday the girls and I invited ourselves over to the Grandparents and Friday was a meal I’ll try and post tomorrow.  This recipe is borrowed from Orangette via the Food Network, and after some looking around, a lot of sites have a similar one – they’re great because they are light and crispy and perfect.

Really Great Waffles

3/4 c. flour AND 1/4 c. cornstarch

1 1/2 t. sugar

1/2 t. baking powder

1/4 t. EACH baking soda AND salt

1 c. buttermilk (or half buttermilk and half regular milk)

1/4 c. canola oil AND 1 egg AND 1 t. vanilla

Whisk together the flour, cornstarch, sugar, baking powder, baking soda and salt and then add in the rest of the ingredients.  Mix well and then let the batter sit for a half hour or so.

Cook the waffles according to the instructions of your waffle iron, and don’t worry about spraying it – the waffles release easily with no extra assistance.  Enjoy!
