Saskatoon Bran Muffins

I remember that this recipe came out of a parenting magazine, but I have no idea which one.  It’s super good! – and we all love that it has Saskatoon berries in it!


Ingredients

Scale

1 c. plain or vanilla yogurt AND 1 t. baking soda

1/2 c. brown sugar

1 egg AND 1/2 c. canola oil

1 c. wheat bran AND 1 t. vanilla

1 c. flour

2 t. baking powder AND 1/2 t. cinnamon

1 c. Saskatoon berries


Instructions

Preheat oven to 350 and grease a 12 cup muffin pan.  In a small bowl, stir together the yogurt and baking soda and set aside.

In a large bowl, beat together the sugar, egg and oil (by hand is fine), then stir in the bran and vanilla.  Add in the flour, baking powder and cinnamon and mix well.

Fold in the yogurt mixture, followed by the berries and spoon the batter evenly into the muffin cups.  Bake for about 15 to 20 minutes until the tops bounce back to a light touch and then allow the muffins to rest in the tin for a few minutes before popping them out on a rack to cool – enjoy!

    Loved the taste but wasn’t impressed with all the saskatoons having a reunion at the bottom of each muffin. I guess our saskatoons are just too big and heavy.
