Tuna (or Salmon) Melts

The girls loved these – it’s a combination of maybe 3 recipes that Mom read to me over the phone and so I’m only giving an outline here – again, mostly so that I’ll remember what I did!


Ingredients

Scale

Tuna (or Salmon) Melts

1 can (133 g drained) tuna (or salmon) drained and flaked

24 T. sweet relish or chopped Gherkin or sweet pickles

24 green onions, finely chopped

24 hard-boiled eggs, chopped

1/21 c. grated old cheddar

mayonnaise

6 English muffins (12 halves)


Instructions

In a medium bowl, combine the tuna, relish, onion, egg and cheese and stir well (using a fork is easiest).  Add just enough mayonnaise to moisten it – about 2 tablespoons.

Divide equally among muffin halves placed on a cookie sheet and top with extra cheese if you’d like – this whole recipe is ‘to taste’ and it’s pretty tough to ruin it.

Bake at 350 for about 15 minutes and dive in.
