SunButter Cookies

Description

Waverly is extremely allergic to peanuts, but peanut butter cookies used to be one of our favorites…so it was great news to me when, on August 26th, Julie, from Dinner with Julie, visited the NoNuts Golden Peabutter people and the results were very peanut butter-like!  Also, as of February, 2013, I’ve tried Wow Butter, and it also does the trick – 2015 – (our new favorite peanut butter substitute is SunButter).


Ingredients

Scale

1 c. EACH soft butter (227 g), sugar (200 g) AND brown sugar (200 g)

1 jar (500 mL) SunButter

2 eggs AND 1 t. vanilla

2 1/2 c. flour (313 g) AND 1 t. baking powder

2 t. baking soda AND 1/2 t. salt


Instructions

Preheat the oven to 375 and line a couple of baking sheets with parchment.  Using your electric mixer, cream together the butter, both sugars and SunButter.  Add in the eggs and vanilla and mix well again, scraping down the sides as needed. Whisk together the 4 dry ingredients and add them all at once, then mix on low until all of the flour disappears.

Roll into balls (however large you’d like them, just keep them even for better baking) and then chill the balls for at least 30 minutes.  When you’re ready to bake, line them up on your prepared baking sheets leaving room for spreading, press with a fork and bake for 8 to 12 minutes, depending on size.

Celebrate!! – but save a couple for your family – this makes a big batch…usually 4 to 5 dozen!
