Chocolate Cake (Deanna, 8 x 8)

Description

This is an old recipe from Mom that makes the perfect ‘small’ chocolate cake.  Because I wanted to make mini chocolate cupcakes, I decided to give this recipe a try and it worked…about 2 teaspoons per mini cupcake baked at 350 for 12 minutes! – and it also makes at least 4 dozen.  Yum.


Ingredients

Chocolate Cake (Deanna, 8 x 8)

1 c. sugar

3 T. butter, softened

1 egg, beaten slightly

1/2 c. cocoa, filled to 1 cup with boiling water, stirred and cooled

1/2 t. baking soda AND 1/2 c. boiling water

1 c. flour AND 1 t. baking powder


Instructions

Beat together the sugar and butter and then add the egg and cocoa mixture, mixing well to combine.  Stir the baking soda into the 1/2 cup of hot water, add to the first mixture and blend.  Finally add the flour and baking powder and mix well.

The batter will be thin – if making a cake, pour it into a greased 8 x 8 pan and bake at 350 for 20 to 25 minutes.  If making mini cupcakes, bake as directed above.
