Bran Muffins (Deanna’s Original)

Description

There are hundreds of versions of plain old bran muffins – this one came from Mom and it’s good! (especially with old cheddar and homemade jam!).


Ingredients

Scale

1/4 c. of butter, softened AND 1/2 c. brown sugar

1/4 c. molasses AND 2 eggs, slightly beaten

1 c. milk

1 1/2 c. wheat bran

1 c. flour AND 1 1/2 t. baking powder

1/2 t. EACH baking soda AND salt

1/2 c. raisins (optional)


Instructions

Either by hand or using an electric mixer, cream together the butter and sugar, then add the molasses and eggs and beat well.

Add the milk, stir to combine, then the bran and stir again.

In a small bowl, combine the flour, baking powder, baking soda and salt and add to the mixture, stirring until just combined.  Add the raisins if you’re using them.  Pour the batter evenly into whatever sized, greased muffin tins that you’re using.

Bake at 375 for 20 minutes.  This is also a very easy recipe to double and they freeze beautifully!
