Double Chocolate Oatmeal Cookies

  • Author: Meagan

Description

This recipe is directly from Deanna, I don’t know where she got it, but it’s been passed on to absolutely everyone who’s ever tried one – enjoy!

Ingredients

Scale

1 c. butter

1 c. sugar AND 1/2 c. brown sugar

1 egg AND 1 t. vanilla

1 c. unsweetened coconut

1 1/2 c. flour AND 1 1/4 c. oatmeal

1 t. EACH baking soda AND baking powder

2 T. cocoa AND 1/4 t. salt

1 1/2 c. chocolate chips AND 1/2 c. chopped pecans

Instructions

Either by hand or using an electric mixer, cream together the butter and both sugars, then add the egg, vanilla and coconut and mix well.

In a separate bowl, combine the dry ingredients (flour thru salt) and then add to the original mixture making sure to blend well.  Finally add the chocolate chips and nuts.

Roll the dough into balls and place on a cookie sheet covered in parchment – press the balls with a fork to flatten slightly and bake for 12 minutes at 350.  Another thing  I love to do is make a double batch and freeze a bag of uncooked cookie calls…then there’s never any reason to not have warm cookies a few minutes away.  If baking from frozen (or the cookie balls are still really cold), bake for 10 minutes at 350, take the baking sheet out, use a fork to flatten slightly, and then bake for 3 to 5 minutes more until the cookies are as done as you’d like.

I made these at 9 pm immediately after reading the recipe. They were awesome! I am not even a huge coconut fan and I could not stay out of the batter… x
