El Chupacabra

Description

You’ll think it’s a Pimm’s Cup, but only for a quick moment, then the Cynar does it’s thing.  I found this in, ‘The Food52 Cookbook’, and the only change we made was to skip the simple syrup and just add a titch of brown sugar instead.  What’s listed below makes 1 good-sized drink – enjoy!


Ingredients

Scale

El Chupacabra – makes 1 drink

2 slices cucumber – 1 to muddle, 1 for garnish

1 oz. EACH blanco tequila AND Pimm’s No. 1

3/4 oz. freshly squeezed lemon juice AND 1/2 t. brown sugar

1 dash Peychaud bitters

soda water AND 1/4 oz. Cynar


Instructions

Muddle 1 slice of the cucumber at the bottom of your shaker then add in the tequila, Pimm’s, lemon juice, brown sugar and bitters, then add ice and shake.  Strain into your favorite glass (with ice), top off with soda water then float the Cynar.  Garnish with the second cucumber slice and serve!
