Raspberry Oatmeal Bars

Description

Ma made these first, the girls loved them, and I had literally just made raspberry jam and it was still sitting on the counter…so this recipe was meant to be!  Borrowed from The Pioneer Woman, the original recipe uses strawberry jam, so switch things up as you wish – enjoy!

Raspberry Oatmeal Bars

1 1/2 c. EACH flour AND oatmeal

1 c. brown sugar

1 t. baking powder AND 1/2 t. salt

1 c. cold butter, cut into pieces

~1 1/2 c. raspberry jam (or your favorite fruit preserve)


Instructions

Preheat the oven to 350 and butter a 9 x 13 cake pan.  In a large bowl, whisk together the 5 dry ingredients, then cut in the cold butter as you would with pastry.  Firmly press half of this mix into your prepared pan, then use the back of a measuring cup or the bottom of a glass to get it all even and flat.

Spread on the raspberry jam in a thin layer, then sprinkle the rest of the dry butter mix evenly over top and give it a light pat all over to keep it in place.  Bake for about 35 minutes until the bars are a light golden brown then leave them to cool completely before cutting them into squares.
