Christmas Blueberry Oat Muffins

These muffins have been a Christmas morning tradition in Brock’s family for years!  Thanks Grandma Dorial!


Ingredients

Scale

1 c. oatmeal AND 1 1/4 c. buttermilk

1 beaten egg AND 1/4 c. melted butter

1 c. flour AND 1 t. baking powder

1/2 t. EACH baking soda AND salt

3/4 c. brown sugar

1 c. fresh or frozen blueberries


Instructions

Preheat the oven to 400 and lightly grease a 12-cup muffin tin.  In a medium-sized bowl, combine the oatmeal and buttermilk and let stand for about 10 minutes, then stir in the egg and melted butter.

In a separate bowl, whisk together the flour, baking powder, baking soda, salt and brown sugar.  Add the dry ingredients to the wet and stir until the everything is just mixed, then fold in the blueberries.  Bake for 15 to 18 minutes until the tops are lightly golden and bounce back to a light touch.  Leave the muffins  in the pan for a few minutes to rest before turning them out onto a rack to cool completely (or eat for breakfast!).
