Granola (Coconut, Lime and Cashew)

Description

Another granola!  Yummy!  I found this version in, ‘Gluten-Free for Good’, by Samantha Senevitatne – enjoy!


Ingredients

Granola (Coconut, Lime and Cashew)

4 T. melted coconut oil (or butter) AND 1/4 c. maple syrup

4 t. lime zest (from 1 or 2 limes) AND 1/4 t. kosher salt

2 c. large flake oats

1 c. EACH unsweetened flaked coconut AND raw cashews

1/4 c. flax seed meal

1/2 c. chopped, dried sour cherries (or golden raisins)


Instructions

Preheat the oven to 300 and line a large baking sheet with parchment.  In a large bowl, whisk together the coconut oil, maple syrup, lime zest and salt, then add in the oats, coconut and cashews and stir until everything is well coated.  Add in the flax seed meal and stir again.

Spread the mixture out evenly on your prepared baking sheet and bake for about 30 minutes, making sure to take it out and stir it after each 10 minute interval.  You want the granola to be golden and crisp, but the coconut can burn quickly if you’re not watching it.  When the granola is finished cooking, add in the fruit, give it a stir on the baking sheet and then allow it to cool completely before storing.
