Granola (Pumpkin Pecan)

Borrowed from Sara Forte’s, ‘The Sprouted Kitchen’, the girls and I loved this one…because it’s tastes a lot like pumpkin pie! To be fair however, this is not Brock’s favorite version of his morning granola…because it tastes like pumpkin pie. Below is my doubled version with the spices individually measured (instead of a ‘pumpkin pie spice mix’), if pumpkin pie is your thing then this granola is definitely for you – enjoy!
Ingredients
Granola (Pumpkin Pecan)
5 T. olive oil
1 t. EACH salt AND cinnamon
1/2 t. ground ginger
1/4 t. EACH ground cloves AND nutmeg
2/3 c. EACH maple syrup AND pumpkin puree
4 c. large flake oats
1 c. raw chopped pecans
6 T. sesame seeds
1 c. raisins, golden raisins, Craisins or a combo
Instructions
Preheat the oven to 325 and line a large baking sheet with parchment. In a large bowl, whisk together the olive oil, 5 spices, maple syrup and pumpkin, then add in the oats, pecans and sesame seeds and stir until well coated and combined.
Spread the mix out evenly onto your prepared baking sheet and bake for about an hour, taking it out to give it a stir every 15 minutes or so. When the granola is ready, take it out of the oven, add in the raisins and give it a mix, then allow it to cool completely before storing in an airtight container.
