Description

Couscous is a quick and tasty accompaniment to almost anything, so I thought this recipe that I found on cbc.ca was a great way to ‘fancify it’.  We enjoyed this at a family dinner with a quadruple batch of Portuguese Chicken (and a triple batch of couscous) – a rather relaxing way to feed a crowd!


Ingredients

Company Couscous

1 1/4 c. boiling water

1 1/4 c. couscous AND 1 T. butter AND salt and freshly ground pepper AND a pinch of cardamom

2 T. EACH toasted pistachios, almonds AND dried apricots – all chopped

2 green onions, chopped


Instructions

In a medium pot, bring the water to a boil and then turn off the heat, add in the couscous, butter, salt and pepper and cardamom, give it all a stir with a fork and then put on the lid and leave it for 5 to 10 minutes.

Fluff the couscous with a fork, add in the nuts, apricots and green onion and serve it up as you would – enjoy!
